Artichoke hearts are always a treat. In this simple dish,they are combined with garlic bread crumbs, and parmesan cheese and baked in a pie crust topped with mozzarella cheese. Ingredients:
1 tbs olive oil |
1 clove garlic,minced |
2 (6 oz) cans artichoke hearts,drained |
1.2 c italian sesoned bread crumbs |
1/2 c grated parmesan cheese,divided |
1 (9 ) unbaked pie crust |
3 eggs beaten |
1 (8 oz.) pkg shredded mozzarella cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Heat oil in large skillet over med. heat. Saute garlic until it starts to brown. Stir in the artichoke hearts and cook 10 mins before adding the bread crumbs and half of the Parmesan cheese. When heated through,transfer half of artichoke mixture to pie crust. 3. Pour eggs over artichoke mixture and sprinkle in rest of the Parmesan cheese. Spoon rest of artichoke mixture into the pie and top with mozzarella. 4. Bake for 45 mins ,or till crust begins to brown. |
