Delicious! These were served at a wedding shower I attended and everyone asked for the recipe Ingredients:
1 cup breadcrumbs |
1 (14 ounce) can water-packed artichoke hearts, drained and chopped |
3/4 cup parmesan cheese, fresh, grated |
1/4 cup mayonnaise |
1 garlic clove, pressed |
fresh parsley, snipped (optional) |
Directions:
1. Preheat oven to 350. Chop artichoke hearts. Grate cheese. In same bowl, combine artichokes 1/2 cup of the cheese, mayonnaise and garlic pressed with a garlic press; mix well. .Using a small scoop, place one scoop artichoke mixture into bead crumbs roll until coated place on parchment lined baking sheet,sprinkle with remaining cheese. If desired, top with chopped parsley. 2. Bake 25-30 minutes or until they are golden brown Remove to cooling rack. Serve. |
