A delicious appetizer from Judy Anderson Ingredients:
2 (6 ounce) cans artichoke hearts |
1 small onion, chopped |
1/2 cup cracker crumb |
1/8 teaspoon pepper |
1/8 teaspoon oregano |
1/4 teaspoon tabasco sauce |
2 cups cheddar cheese, grated |
1 garlic clove |
4 eggs |
1 teaspoon salt |
2 tablespoons parsley |
Directions:
1. Drain 1 can artichokes and saute with onion and garlic for 5 minutes. 2. Beat the eggs with a fork. Add the cracker crumbs, seasonings, parsley and additional artichokes. 3. Fold in the onion mixture and the cheese. 4. Baked in a greased pan at 325 for 30 minutes. When cool, cut into small squares. |
