7 ounces red peppers, roasted & coarsely chopped (fresh or jar) |
6 ounces marinated artichoke hearts, coarsely chopped |
1/2 cup parsley, fresh minced |
1/2 cup parmesan cheese, freshly grated |
1/3 cup olive oil |
1/4 cup capers, drained |
3 teaspoons garlic, chopped |
1 tablespoon fresh lemon juice |
Directions:
1. Combine all ingredients in food processor, pulsing until finely chopped. 2. Taste and adjust seasoning with salt& pepper. |
