My family has been making this for over thirty years. It comes from an older sister's fourth grade class cookbook. I use fresh bread crumbs that are not very fine. Ingredients:
2 - 6 oz. jars of marinated artichokes hearts, chopped-reserve liquid from one jar |
1/2 pound grated cheddar cheese |
1/4 cup fresh bread crumbs. |
4 eggs |
1 tsp each of oregano, tabasco and ground black pepper |
1 small onion |
1 clove of garlic-minced |
2 tbsp. minced fresh parsley |
Directions:
1. Sauté garlic and onion in reserved liquid. 2. Whisk eggs in a bowl and then combine all other ingredients, including onions and garlic. 3. Bake in greased 11x9 pan at 350* for 30 minutes. 4. This can be served warm or at room temperature. Easily doubled and baked in a 9 x 13 pan. |
