Italian rolls spread with artichokes,sun-dried tomaaotes,parmigiano cheese and fresh basil, topped with salami and fresh mozzarella and green Olivada. Sandwiches need to be refrigerated at least 4 hrs. or up to 1 day before serving. wouldn't let me list Green Olivada, so I listed Olive Spread instead; see my Green Olivida Crostini #456032 for Green Olivida. Ingredients:
2 (6 ounce) jars artichoke hearts (marinated, drained,chopped) |
1/2 cup sun-dried tomato (oil packed, drained,chopped) |
1/2 cup parmigiano (fresh grated) |
1/2 cup basil (fresh,chopped) |
2 tablespoons extra virgin olive oil |
4 italian rolls |
12 ounces fresh mozzarella cheese (water packed,drained,sliced) |
6 ounces salami (sliced thin) |
8 tablespoons olive spread (green olivada recipe #4560320) |
Directions:
1. Mix first 5 ingredients in a medium bowl, season with salt and fresh black pepper,divide artichoke mixture among bottom halves of rolls. 2. Top with cheese, then salami, spread top half of each roll with 2 tablespoons Olivada, place atop salami. 3. Press sandwiches lightly to compact, wrap each tightly in plastic wwrap, refrigerate at least 4 hours or up to 1 day before serving. |
