I make this simple dip for almost every potluck, and it is always a huge hit. I've been asked to give out this recipe over and over, and people are always surprised at how something so simple can taste SO good. Ingredients:
6-8 garlic cloves |
1 can artichoke hearts, unmarinated |
1 cup mayonnaise |
1 cup parmesan cheese |
Directions:
1. Preheat oven to 350. 2. In a food processor, finely mince the garlic. 3. Add artichokes and process until well chopped. (You can do these first two steps by hand with a garlic press and a knife if you like bigger chunks. But DO NOT try it with a blender, as the artichokes just gum up the blades.) 4. Place processed garlic and artichokes in a medium bowl. Add mayo and parmesan cheese and mix well. 5. Spread in a glass baking dish. (8x8, 9x9, round 2 quart, or even a pie plate will work.) 6. Bake for 30 minutes or until top is golden brown. 7. Serve with crackers, bread cubes, or sliced veggies. |
