Artichoke Cream Cheese Spread |

This recipe was being given out with samples at the grocery store. I bought all the ingredients that day and made it right away. It is very garlicky! Ingredients:
1 jar marinated artichoke hearts |
4 scallions (i have used red onions instead) |
1/4 cup fresh parsley |
6 sprigs thyme |
8 oz. cream cheese |
1/2 cup sour cream |
2 cloves garlic, minced |
salt and pepper to taste |
small squeeze of fresh lemon juice (i use about a tablespoon) |
1/2 cup walnut pieces, chopped |
Directions:
1. Drain the marinade from the artichoke hearts. Discard the liquid. Finely chop the artichoke hearts. 2. Finely chop the onions, parsley and thyme leaves, stripped from the stems 3. Mix the cream cheese with the sour cream,garlic, salt, pepper, and lemon juice. 4. Add the artichoke and herbs. Blend well. 5. Add the walnuts. 6. Serve with crackers or chips. I use golden corn chips. |
