I ate at American Bandstand in Kansas City. They had the most wonderful dish there-if you have a chance try it. Here is me trying to recreate it. Ingredients:
7 tablespoons butter |
1 slice finely minced bacon |
1 garlic clove, finely minced |
4 boneless chicken breasts |
1 (12 ounce) can artichoke hearts |
1/3 cup flour |
salt and pepper |
1 cup chicken broth |
1 cup white wine |
1/4 cup chopped fresh spinach |
1/4 cup chopped tomato |
1 tablespoon capers |
Directions:
1. Fry the bacon in the butter. 2. Add garlic. 3. Dredge chicken in flour. 4. Add to the oil; brown. 5. Add wine. 6. Add salt and pepper. 7. Add artichokes that have been chopped along with juice. 8. Mix flour to chicken broth. 9. Add to pan. 10. Add capers 11. Cook till chicken is done. 12. Just before serving, add tomato and spinach. |
