Mama's artichoke cheese balls. Ingredients:
16 ounces artichoke hearts, drained and mashed (two 8oz cans ) |
2 tablespoons olive oil |
2 -3 garlic cloves, chopped |
2 eggs, beaten |
1/2 breadcrumbs |
1/2 cup parmesan cheese |
Directions:
1. Mash 2 cans drained artichoke hearts. 2. Put olive oil into frying pan. 3. Saute cloves. 4. Add mashed artichokes and eggs. 5. Saute and stir about 5 minutes. 6. Mix bread crumbs and cheese in bowl. 7. Remove mix from heat, roll into balls, roll in bread crumb and cheese mixture. |
