Artichoke And Spinach Dip |

A popular appetizer. Ingredients:
1 small white onion, diced |
2 tbl. butter |
2 tbl.flour |
1 c chicken stock |
heavy cream, as needed |
1/4 c parmesan cheese |
1/2 c mozzarella cheese |
1 can artichoke hearts (not marinated), drained |
1 package fresh spinach, chopped |
Directions:
1. Saute the onion in the butter until clear. 2. Add flour, stirring constantly. 3. Turn heat to low. 4. Slowly sitr in chicken stock. 5. Add cream and continue heating until sauce is thick and creamy. 6. Place saucepan in an ice bath. 7. Add cheese and artichokes. 8. Add spinach after mixture is cool. |
