Artichoke And Orange Salad |

My Sicilian step-grandfather used to make this for himself and wouldn't share it with any of us. So I watched, learned and made it myself! Ingredients:
24 baby artichokes |
4 large oranges |
3 tablespoons extra-virgin olive oil |
2 tablespoons balsamic vinegar |
1 small red onion, thinly sliced |
3/4 cup kalamata olives or other brine-cured black olives |
Directions:
1. Clean artichokes. 2. Cook in large pot of boiling salted water 4 minutes. 3. Drain and cool. 4. Cut into thin slices. 5. Grate enough orange peel to measure 1 teaspoon. Transfer peel to large bowl. 6. Squeeze 1/3 cup juice from 1 orange into the bowl. 7. Using a small sharp knife, cut off peel and white pith from 8. remaining oranges. 9. Cut oranges crosswise into 1/4-inch-thick slices; set aside. 10. Mix oil and vinegar into orange juice mixture in bowl. 11. Season with salt and pepper to your taste. 12. Mix in artichokes and onion. 13. Let stand 10 minutes. 14. Using slotted spoon, arrange artichokes and onions on platter. Garnish with orange slices and olives. 15. Drizzle vinaigrette from bowl over salad. |
