Artichoke and Mushroom Kabobs |

These are nice when having guest as they can be made ahead and left to marinate till just before serving. Cook time Not reflecting the time needed for marinating. A basic recipe that is easly added to. Some of the things we have added on occasion are pearl onions, zucchini and bell peppers. Ingredients:
2 (9 ounce) packages frozen artichoke hearts |
1 pint fresh mushrooms |
1 pint cherry tomatoes |
3/4 cup italian dressing (will need more if adding other veggies) |
salt and pepper |
Directions:
1. Cook artichoke hearts as directed on package; drain. 2. combine artichoke hearts, mushrooms and dressing. 3. Cover and let stand about 4 hours at room temperature or overnight in the refrigerator. 4. If broiling preheat broiler. 5. Alternately thread artichoke hearts and mushrooms on skewers with cherry tomatoes. Broil or grill about 5 to 6 minutes, basting occasionally with dressing. Season with salt and pepper. 6. Serve hot with additional dressing. |
