A hearty and comforting soup from the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Overnight soaking not included in preparation time. Ingredients:
2 cups dried yellow peas |
3 quarts water |
2 teaspoons salt (to taste) |
1 lb pork, cubed |
1/4 teaspoon ginger |
Directions:
1. Soak peas overnight, drain and add 3 quarts water. 2. Bring to a boil and cook rapidly; skim off any skins. 3. After cooking for an hour, add pork and simmer and simmer for 2 hours or until pork is tender. 4. Add seasonings. |
