Fast, fresh, bright-tasting & inexpensive (especially if you have onions, cilantro & peppers int eh garden) side dish - perfect for grilled chicken or enchiladas, burritos. Serve with your favorite red, green or fruity-hot salsa on the side.
Ingredients:
1 onion, diced
2 garlic cloves, minced
2 tablespoons vegetable oil
1/2 cup parsley, minced
2 cups long grain white rice
4 1/2 cups vegetable stock
2 teaspoons salt
8 green onions, minced
1/2 cup cilantro, minced
3 1/2 ounces green chilies, diced
Directions:
1. In a medium saucepan over medium heat, saute onion and garlic in oil.
2. until softened and translucent (3 to 4 minutes). Stir in parsley, rice,.
3. stock, and salt.
4. Cover and simmer over low heat until all liquid is absorbed (18 to 20.
5. minutes). Remove from heat and stir in green onions, cilantro, and diced.
