Arroz Con Pollo Low Fat Version.

This was given to me by a friend of the family. This is weight watchers compliant.
Ingredients:
2 -3 skinless chicken breasts, cut into chunks
2 tablespoons olive oil
1 1/2 cups instant rice
1 cup fat free chicken broth
1/2 cup medium hot salsa
1/2 cup sliced mushrooms
Directions:
1. Put 2 T. olive oil in In a Skillet and cook until chicken until white in color. Put in the rice and cover with chicken broth. Pour salsa and mushrooms into pan and simmer.
