I got this from 'City Palate', a local Calgary foodies publication. It is the best rice pudding recipe I have made to date. We can get 'Dulce de Leche' at Superstore so I can make it almost whenever I like. Ingredients:
1/2 cup white rice |
1/4 cup raisins |
1 cinnamon stick |
2 cups whole milk |
1 cup sugar |
1 pinch salt |
2 tablespoons dulce de leche |
1 tablespoon lemon zest |
ground cinnamon |
Directions:
1. In a saucepan, cover the rice, raisins and cinnamon stick with 1 cup of water. Bring to a boil over high heat, then reduce the heat to low, cover and simmer the rice until it’s tender. 2. In another saucepan, mix the milk, sugar and salt over medium heat and add the cooked rice. Bring the mixture to just below a boil, turn the heat to low, and simmer the pudding until the rice has absorbed most of the milk and sugar mixture. 3. Add the dulce de leche and stir until it is well combined. 4. Cool the pudding and serve it sprinkled with lemon zest and cinnamon. 5. Serves 2 to 4. |
