Arroz Azafranado-Saffron Rice Spain |

Spanish rice at it's best! A meal on its own. Found this recipe on the Internet and wanted to post it in time for ZWR5 Ingredients:
1 1/2 lbs pork (or chicken boneless) |
2 -3 tablespoons oil |
1 green pepper, diced |
1 garlic clove, crushed |
12 ounces rice (300 gms) |
1 medium onion, diced |
3 -4 tomatoes, peeled and cubed |
1 pinch saffron |
pepper |
salt |
1 lemon, juice of |
Directions:
1. Place oil in saucepan; cook meat in hot oil. 2. Add onion, pepper, salt, tomatoes, green pepper and garlic and reduce heat. 3. to medium temperature. 4. After vegetables appear tender crisp, add salt, rice and a little water as needed. 5. Simmer until rice is cooked, remembering to add saffron and stir occasionally while cooking. 6. Serve with 1/2 lemon per person to squeeze over each serving. |
