Chicken breast stuffed with aromatics served over cous cous with asparagus on the side. Ingredients:
1 chicken breast |
1/2 celery stalk |
1/2 medium carrot |
1/2 slice onion |
1 tbsp balsamic vinegar |
1 tsp salt |
2 tsp pepper |
1 clove garlic |
10 spears asparagus |
1 tbsp olive oil |
1 cup cous cous |
Directions:
1. Trim off any excess fat or skin from the chicken breast. 2. Create a pocket in the chicken. 3. Chop the celery, onion, and carrot medium fine. 4. Smash the garlic. 5. Mix the mirepoix with the garlic and stuff it into the pocket. 6. Salt and pepper the chicken breast. 7. Slather with balsamic. 8. Bake at 350 for 40 minutes (or until done). 9. Coat asparagus with olive oil. 10. Salt and pepper asparagus. 11. Grill until tender and slightly charred at the tips. 12. prepare cous cous according to directions. |
