Not all that exciting in and of itself, but a spiced up version of rice- nice at dinner parties to make it feel a bit more special- goes with curries or any Indian dishes Ingredients:
basmati rice measured to the 450ml level on a measuring jug |
1.2 l (2 pints) plus 600ml (1 pint) water |
11/4 tsp salt |
3/4 teaspoon turmeric |
3-4 cloves |
2.5 cm (1 inch) cinnamon stick |
3 bay leaves |
3 tbsp unsalted butter |
Directions:
1. Put the rice in a bowl and wash in several changes of water. Drain. Pour 1.2 litres fresh water over the rice and let soak for 30 minutes. Drain. 2. Combine the rice, 600ml water, salt, turmeric, cloves, cinnamon and bay leaves in a heavy pan and bring to the boil. 3. Cover with a tight fitting lid, turn heat to very, very low and cook for 25 minutes. 4. Let the pan rest covered and undisturbed for 10 minutes. 5. Add the butter to the rice and serve. 6. When serving remove the cloves, cinnamon and bay leaves. |
