Taken from Out of This World CookBook II. I have never tried this! I don't know if it's meant to be a main course on a buffet or for a large family, or just a meaty side dish - so I'll categorize it as both. Ingredients:
2 lbs pork sausage |
2 large onions, chopped |
1 green bell pepper, chopped |
1 bunch celery, chopped |
2 cups long grain rice |
1/2 cup sliced almonds |
3 packages dry chicken noodle soup mix |
9 cups boiling water |
Directions:
1. Preheat oven to 375F degrees. 2. In a Dutch Oven, over medium-high heat, add sausage, onions, pepper and celery. 3. When sausage is browned, stir in rice and almonds. 4. In a separate bowl, combine dry soup mix with boiling water; stir well. 5. Stir soup mixture into Dutch Oven and combine. 6. Cover casserole and bake in preheated oven for 40 minutes; uncover and bake for an additional 50 minutes. 7. Serves a lot! |
