This recipe is the speciality of the Dvin Hotel, Yerevan, Armenia and was served to me at a dinner party. Ingredients:
1 1/2 cups bulgur wheat (kasha) |
1 onion, chopped |
1 garlic clove, minced |
2 tablespoons olive oil |
2 cups chicken broth |
1/4 cup almonds, slivered |
1 1/2 cups chickpeas, cooked |
2 tablespoons lemon juice |
1/2 teaspoon cinnamon |
1/4 teaspoon cardamom |
1/2 teaspoon allspice |
1/4 teaspoon ground ginger |
1/4 teaspoon pepper |
1/2 cup raisins |
sour cream |
Directions:
1. Sauté onion & garlic in olive oil until soft. 2. Add kasha & stir well. 3. Add all remaining ingredients except sour cream. 4. Bring to a boil, reduce heat to simmer, cover, & cook until liquid is absorbed. 5. Top each serving with a generous dollop of sour cream. |
