traditional Armenian stew from epicurious Ingredients:
1 lb eggplant |
16 ounce zucchini |
2 green bell peppers |
8 ounce apple |
1 large onion, chopped |
2 garlic cloves, chopped |
28 ounce whole tomatoes |
10 ounce frozen cut okra |
2 tbsp tomato paste |
1 1/4 tsp salt |
3 tbsp lemon juice |
2 tbsp olive oil |
Directions:
1. cook fresh vegetables (not tomatoes) in heavy pot over medium-low heat for 40 minutes 2. stir in tomatoes with juice, okra, tomato paste, salt and cook for 15-20 minutes 3. remove from heat and stir in lemon juice 4. best if cooked a day in advance |
