traditional Armenian stew from epicurious
Ingredients:
1 lb eggplant
16 ounce zucchini
2 green bell peppers
8 ounce apple
1 large onion, chopped
2 garlic cloves, chopped
28 ounce whole tomatoes
10 ounce frozen cut okra
2 tbsp tomato paste
1 1/4 tsp salt
3 tbsp lemon juice
2 tbsp olive oil
Directions:
1. cook fresh vegetables (not tomatoes) in heavy pot over medium-low heat for 40 minutes
2. stir in tomatoes with juice, okra, tomato paste, salt and cook for 15-20 minutes
3. remove from heat and stir in lemon juice
4. best if cooked a day in advance
