4 medium white potatoes |
1 teaspoon salt |
1 tablespoon dried mint |
1/2 large purple onion, sliced |
1/4 cup olive oil |
1/4 cup lemon juice |
Directions:
1. Boil potatoes until done. 2. Slice when cool. 3. Add all the ingredients together. 4. Toss and chill about 2 or more hours. |
