Armenian Pizza- Lahmejun

Wished I had the photos for these. Another 50 year old recipe from our Armenia neighbor. I make these for parties even on the grill, can be main dish too. I also omit the lamb, and use ground turkey, ground beef or even omit beef and use the fragrant parsley tomato sauce with cheese instead. Read more . If you do instages it's not a hard recipe and it is very delicious
Ingredients:
dough
1 pkt yeast
1/4 cup warm water
or 1 cake compressed yeast crumbled in 1/4 cup lukewarm water
1 1/2 tsp sugar
1 1/2 tsp salt
3/4 cup warm water
1/4 cup soft shortening ( i use crisco type )
about 3 cups flour- see below
meat mixture
1 1/4 lb lean ground lamb
2/3 cup fresh chopped parsley
1/2 cup fresh chopped green or red bell pepper
1 large garlic clove minced or use 2
1/4 to 1/2 tsp allspice
1/4 to 1/2 tsp black p
1 pinch red hot pepper
1 3/4 cup to 2 cups canned tomatoes mashed ( or half canned and half fresh ripe, grind ripe ones )
3 tbs tomato paste
3 to 4 tsp salt
Directions:
1. Dough:
2. dissolve yeast in water.
3. Stir in the sugar, salt, water and shortening.
4. Blend in 2 3/4 cups to 3 cups flour or enough to make a stiff dough.
5. Knead on a floured surface until smooth and elastic.
6. Cover and let rise double in a warm place.
7. Prepare meat mixture.
8. Mix all meat mixture ingredients together.
9. You will need to divde into about 12 portion or about 1/3 cup for each pizza
10. Punch down dough and divide into 12 pieces.
11. Cover and let sit 15 minutes, 2 inches aprt on floured surface
12. Roll out each piece to a 7 or 8 inch circle
13. Place circles on a cookie or baking sheet a few inches aprt.
14. Spread each with 1/3 of the meat mixture.
15. Bake first in a 500F or very hot oven about 5 to 6 minutes.
16. Then broil 5 inches from top heat another 5 to 6 minutes or meat is light brown.
17. Bake and broil all in this manner.
18. Cool and store leftovers refrigerated covered.
19. These freeze extremely well.
20. Thawing is not necessary, just heat under the broiler.
21. Note: 1/3 cup of the filling will not make a heavy laden pizza but I like it that way.
22. You may also like a spicey sauce and so season the meat filling to taste.
23. This can easily be made on the grilled for gtilled pizza !
