A really healthy soup. Ingredients:
3t canola oil |
1lg onion, chopped |
3 garlic cloves, minced |
1t ground cumin |
1/2t coriander |
1t hungarian paprika |
6c chicken stock |
11/2c dried lentils, rinsed and drained |
20 oz. frozen spinach, thawed |
29 oz. tomatoes, chopped |
salt |
pepper |
4t lemon juice |
Directions:
1. Put oil, onion, garlic , cumin, coriander, and paprika. Saute for 5 minutes.Then add the chicken stock. 2. Add the lentils, spinach, tomatoes and bring to a boil. 3. Reduce the heat to low, season with salt and papper, and simmer, covered, until the lentils are tender, about 50 minutes. 4. Season with the lemon juice and additional salt and pepper, if needed. 5. Let sit for 5 minutes before serving. |
