Tried and true. I love these beans. Loaded with flavor. This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sanderson Estate in Duncanville, Texas in 1990. Ingredients:
2 small white onions, sliced |
1/4 cup extra virgin olive oil |
1 pound green string beans, cut into 1-inch pieces |
1 medium eggplant peeled and cut into 1/2-inch cubes |
1 large can tomatoes |
1 teaspoon salt |
1/2 cup french dressing |
Directions:
1. Separate onion into rings and fry in olive oil until golden brown. 2. Add string beans, eggplant and tomatoes then cover and simmer 30 minutes. 3. Uncover and add salt. 4. Cook until beans are tender and most of the liquid has evaporated. 5. Pour into a bowl and chill thoroughly then add dressing. |
