Ingredients:
1 (15-pound) fresh ham |
2 cloves garlic |
1 dried red pepper, seeded |
1 tablespoon vinegar |
1 tablespoon coarsely ground black pepper |
2 tablespoons prepared mustard |
1/4 cup plus 2 tablespoons fine dry breadcrumbs |
Directions:
1. Place ham, garlic, red pepper, vinegar, and water to cover in a large stock pot or kettle. Bring to a boil. Reduce heat; cover and simmer 5 hours or until ham is tender. Remove stock pot from heat; set aside. Allow ham to cool completely in cooking liquid in stock pot. 2. Drain ham well; remove fat. Discard cooking liquid and fat. Place ham in a large roasting pan. Rub surface of ham with pepper; brush with mustard. Sprinkle bread crumbs over ham. Bake at 400° for 45 minutes or until browned. Cut into thin slices; serve hot or cold. |
