Arkansas Carbonara Aka Bacon Hash |

Quick breakfast, a la Italian Carbonara Ingredients:
2 strips bacon, diced fairly fine |
1 small potato, diced about 3/16 to 1/4 |
salt & pepper to taste |
35% (whipping) cream |
grated parmesan cheese, to taste (the carbonara taste) |
toasted white or whole-grain bread |
optional |
a handful chopped green onions |
or minced onion, to taste. |

Directions:
1. - Fry Bacon bits until done but not completely crisp. 2. - Add chopped potato (and minced onion, if desired). 3. - Season with salt and pepper to taste. 4. - Stir/flip occasionally to get all sides of potato started cooking. 5. - Pour off excess fat. 6. - Pour in whipping cream to almost cover meat and potatoes. 7. - Sprinkle with Parmesan, if desired. 8. - If you want, and didn't add onion earlier, add a handful of chopped green onion and stir in. 9. - Continue cooking to reduce by about 1/2 to 2/3. 10. - Serve over toast. 11. - Top or side with fried or scrambled eggs. |
