Arkansas Black-Eyed Pea Salad |

Sweet oil and vinegar based salad. Quick and pretty! Ingredients:
3 (8 ounce) cans black-eyed peas |
1 (8 ounce) can green beans |
green pepper |
red onion |
1/2 cup oil |
1 cup vinegar |
1 cup sugar |
4 ounces pimientos |
salt and pepper |
Directions:
1. Drain the peas, beans, and pimento. Chop onion and pepper, I add them to the pea mixture to look the prettiest, it's all to taste. Add oil, vinegar, sugar, salt, and pepper-stir gently. I let it sit at least a couple of hours to overnight.Can be made ahead of time. It travels well and is a crowd pleaser. |
