Arizona's Granny Smith Salad |

Copycat version Ingredients:
2 cups field greens |
1/4 cup gorgonzola |
1/4 cup spiced pecans |
1 granny smith apple, peeled, cored, and julienned |
1/2 cup red grapes |
5 tablespoons red wine vinegar |
1 shallot, minced (about 2 tablespoons) |
1 tablespoon dijon mustard |
1/4 teaspoon sea salt |
1/4 teaspoon fresh ground pepper |
2 tablespoons extra virgin olive oil |
Directions:
1. Dressing. 2. Combine vinegar and next 4 ingredients in a medium bowl. Slowly whisk in oil until well blended. Use immediately, or store in an airtight container in the refrigerator until ready to use; bring to room temperature, and stir or shake to mix. 3. Salad. 4. Mix greens, cheese, pecans, apples, and grapes together. Toss. 5. Pour vinegarette over salad. |
