A spiced up Beef and Bean stew/soup. As with anything adjust the seasoning to suite your own tastes. Ingredients:
1 lb pinto beans (about 2 1/2 cups), rinsed, picked over |
2 10 oz cans beef broth |
2 1/2 cups water |
5 1/2 oz can tomato paste |
1 lb lean beef, cut into 1-inch cubes |
1/4 lb salt pork, diced |
1 medium onion, chopped |
2 cloves garlic, minced |
1 tbs chili powder |
1 tsp cumin seeds |
1/2 tsp dried thyme |
1/2 tsp red pepper flakes |
salt and pepper |
Directions:
1. Place all ingredients in slow cooker; cover and cook on 2. low setting 12 hours or until beans are tender. Season to 3. taste with salt and pepper. Makes 8 to 10 servings. |
