I got this recipe from a friend who was raised in Argentina. It was one of her favorites. It soon became one of mine. This recipe can be prepared up to 8 hours ahead and baked at dinner time. Bring to room temperature first. It is also great re-heated the next day. Ingredients:
1 lb ground beef |
1 medium onion, chopped |
1/2 cup raisins |
1/2 cup green olives, chopped |
2 eggs, divided |
3 -4 boiled potatoes |
milk |
2 tablespoons butter |
parmesan cheese |
Directions:
1. Brown ground beef and onion in skillet. 2. Pour off excess fat. 3. Add raisins and olives. 4. Stir in 1 beaten egg. 5. Set aside. 6. Mash potatoes, adding enough milk to get a spreading consistency. 7. Add 2nd beaten egg. 8. Line a well buttered pie shell with potatoes. 9. Pour meat filling into potato shell. 10. Top with remaining potatoes. 11. Dot with butter. 12. Sprinkle with cheese. 13. Bake at 350 til heated through, about 30 minute. |
