Arepitas De Yuca(yucca Fritters)

These fritters are so good accompanied with a rice & bean dish and of course we can't forget the meat. I honestly don't mind eating these fritters alone as its addicting.
Ingredients:
1 lb of fresh yucca or grated frozen yucca if fresh isn't available
1 egg
1/2 tsp. anise seed
1 tsp salt
dash of sugar
1 cup of oil
Directions:
1. Peel the Yucca with a potato peeler.
2. Cut in chunks.
3. Grind the yucca using a grater.
4. Put the grated yucca in a bowl.
5. To the grated yucca, add the anise,egg, salt and sugar
6. Mix well.
7. Heat a skillet with 1 cup of oil. Bring the temp. up to 350 degrees.
8. Using a tablespoon, drop scoops of yucca into the oil.
9. Fry both sides until golden brown.
10. Serve hot
