You're probably thinking there's no way a dessert with tofu in it could ever be good, right? Well, think again because silken tofu can give a creamy, rich texture to smoothies and frozen desserts like this one. Tofu is also a great source of protein, B vitamins, calcium, and iron—all nutrients that kids need. Ingredients:
1 (12-ounce) can thawed limeade concentrate, undiluted |
1 (12.3-ounce) package light silken firm tofu, drained |
1 1/2 cups water |
Directions:
1. Place concentrate and tofu in a blender; process until smooth. Pour mixture into the freezer can of an ice-cream freezer; stir in 1 1/2 cups water. Freeze according to manufacturer's instructions. Spoon mixture into a freezer-safe container; cover and freeze 2 hours or until firm. 2. Young Chefs can: 3. Stack paper towels to drain tofu 4. Put top on blender, and press blender buttons with adult supervision 5. Older Chefs can: 6. Add limeade and tofu to blender, and blend ingredients with adult supervision 7. Pour mixture into ice-cream freezer |
