With autumn coming, also comes LOTS of pumpkins in all the grocery stores. Love to bake but can't handle the sweets and MISS it? Here you go. Lots of healthy stuff and just plain DELICIOUS too! Go for it! Makes TWO loaves Ingredients:
3 1/2 c all purpose flour |
2 c canned pumpkin |
2 tsp baking soda |
3 c splenda |
1 /2c raisins, seedless, chopped |
1/2 c walnuts, chopped |
1 c egg beaters |
1/2 c olive oil |
1 c water |
1 tsp salt |
2 tbs ground cinnamon |
1 tbs allspice, ground |
1 tsp cloves, ground |
1 tsp ground ginger |
1 tsp vanilla extract |
Directions:
1. Mix all dry ingredients in large mixing bowl, making sure ALL the spices are well mixed. 2. In 1 C mixing cup, put 1/2 C olive oil and finish the 1C with water, mix these two thoroughly, remember water and oil don't normally mix! 3. In a separate bowl mix egg beaters, pumpkin, oil & water mixture AND additional 2/3 C water. 4. Dump wet mixture into dry mixture and throroughly blend together. There are optional ingredients that you can add to give it an extra zing but these all add calories and fat (and sometimes proteins, carbs, etc. so be sure to figure that in if you're logging your foods. Spoon into mini-muffin pans lined with paper liners 5. Bake at 350 degrees for approximately 1 hour. Toothpick test (insert into center of loaf and if it comes out clean it's done) 6. Cool slightly (10 minutes maybe?) 7. Best served after you've wrapped in plastic wrap overnight or placed overnight in airtight container. 8. Enjoy! |
