This recipe comes from my sister. It's a little too sweet for me-maybe too much tomato? Ingredients:
3 tbsp canola oil |
1 cup chopped onion |
3 cloves garlic |
1/2 cup chopped shallot |
1/4 cup diced carrot |
1/2 cup diced celery |
2 tbsp dried oregano |
2 tbsp ground cumin |
1 tsp paprika |
2 1/2 cups chopped chicken breast |
64 ounces organic low-sodium chicken broth |
29 oz. canned whole tomatoes |
4 cups chopped swiss chard |
2 cups quinoa |
Directions:
1. Rinse quinoa 2. Cook quinoa for 5 minutes 3. Chop/dice all vegetables and chicken breast 4. Heat oil on high heat 5. Brown chicken 6. Add garlic, onion, shallots, carrot and celery; cook for 5 minutes 7. Add oregano, cumin and paprika 8. Add chicken broth and canned tomatoes 9. Add quinoa and swiss chard 10. Simmer for 10-15 minutes |
