Simple and delicious.... Light, fruity German cake.... A great coffee accompaniment! Ingredients:
10tbs. softened; unsalted butter |
2/3c. sugar |
1tsp. vanilla extract or 1tbs. vanilla sugar |
3 eggs |
zest of 1/2 lemon |
2c. all-purpose flour |
2tsp. double acting baking powder or 1pk. german backpulver |
1/4c. buttermilk |
1 1/2lb. apricots, cut in half |
Directions:
1. Use an 11 inch Springform pan; buttered and floured, set aside. 2. Cream the butter, sugar, vanilla or vanilla sugar. Beat in eggs, one at a time. Mix in lemon zest. 3. Mix flour, baking powder, salt. Beat into egg mixture. Add buttermilk mix well. 4. Spread the batter into the baking pan. Place apricots on top, cut side down in a circular pattern, starting in middle with a single half. 5. Serve with whip cream..... Enjoy..... |
