Apricot & White Choc Slice |

The biscuits/cookies I use are Arnott's Granita biscuits but any plain sweet biscuit/cookie can be used here Ingredients:
2 (180 g) blocks white chocolate |
125 g plain sweet biscuits, broke up into pieces |
3/4 cup dried apricot, diced |
1/2 cup raisins |
1/2 cup shredded coconut |
Directions:
1. Grease 19 cms square tin. 2. Line with baking paper. 3. Place chocolate in microwave bowl. 4. Microwave on medium for 2 minutes, stirring every 30 seconds till melted. 5. Add biscuits, apricots, raisins and coconut. 6. Stir to combine. 7. Press mixture into prepared pan. 8. Refrigerate, covered for 2 hours or till set. |
