Awesome awesome awesome is all I can say about this refreshing dessert. Ingredients:
1 can apricot halves |
1/3 cup plus 2 tablespoons orange juice divided |
1 teaspoon brown sugar |
1-1/2 teaspoons cornstarch |
1 teaspoon vanilla extract |
2 cups frozen vanilla yogurt |
Directions:
1. Drain apricots reserving juice then slice apricots and set aside. 2. In a saucepan combine 1/3 cup orange juice, brown sugar and reserved apricot juice then bring to a boil. 3. Reduce heat and simmer uncovered for 10 minutes. 4. Combine cornstarch and remaining orange juice until smooth then stir into apricot juice mixture. 5. Bring to a boil then cook and stir for 2 minutes then stir in vanilla and reserved apricots and serve over frozen yogurt. |
