1 tablespoon olive oil |
1/2 cup minced onion |
1 tablespoon minced fresh ginger |
1 cup apricot preserves |
1/2 cup dark rum |
1/2 cup prepared barbecue sauce |
1/4 cup fresh lime juice |
1/2 teaspoon red pepper flakes |
Directions:
1. Over medium-high heat, saute minced onion and ginger in 1 tablespoon olive oil in a saucepan until soft, about 5 minutes. 2. Add rest of ingredients and bring to a boil. Reduce heat and simmer 20 minutes or until thickened. |
