Ingredients:
3/4 cup(s) apricot preserves |
2 pound(s) boneless pork chops |
2 teaspoon(s) crushed red pepper |
2 teaspoon(s) olive oil |
1 cup(s) pineapple juice |
3 teaspoon(s) soy sauce |
1/2 cup(s) water |
4 teaspoon(s) whole-wheat dijon mustard |
2 teaspoon(s) worcestershire sauce |
Directions:
1. Combine first 7 ingredients, whisking to blend. Pour half of marinade into a freezer bag with pork chops; reserving the rest of the marinade in the refrigerator. Marinate pork chops in the refrigerator 30 minutes to 1 hour. Remove pork chops from the bag and combine two marinades. Sear pork chops over medium high heat in olive oil about 2 minutes each side. Add marinade to pan and bring to a boil, Reduce to a simmer and cook about 30 minutes or until cooked through. |
