This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boswell Estate in Arlington, Texas in 1984. Ingredients:
1/2 cup shortening |
3/4 cup firmly packed light brown sugar |
1 tablespoon milk |
1 teaspoon vanilla extract |
1/2 teaspoon salt |
1 cup all purpose flour |
1 cup quick cooking rolled oats |
3/4 cup apricot preserves |
Directions:
1. Preheat oven to 375. 2. Beat shortening and brown sugar using electric mixer for 5 minutes. 3. Add milk, vanilla and salt then beat until light. 4. Add flour and oats to shortening mixture and combine. 5. Set aside 1 cup of the crumbs for topping. 6. Pat remaining crumb mixture into bottom of rectangular baking pan. 7. Spread preserves over crumb crust to within 1/2 of edge of pan. 8. Sprinkle reserved crumb mixture over preserves. 9. Bake at 375 for 25 minutes. 10. Cool completely on wire rack then cut into bars. |
