This is a great bread for Christmas and the holidays, especially. My mother made it every Christmas. It is so good plain or spread with cream cheese. And of course, a hot, steamin' cuppa coffee! :) Ingredients:
1/2 cup dried apricots |
1 cup sugar |
1 egg |
2 tablespoons melted unsalted butter |
1/3 cup orange juice |
2 cups sifted flour |
3 teaspoons baking powder |
1/4 teaspoon soda |
3/4 teaspoon salt |
1 cup pecans, coarsely chopped |
Directions:
1. *Soak apricots in hot water to cover for 30 minutes 2. After soaking, chop the apricots 3. *I have made this bread without doing the above, just snipping the apricots with kitchen scissors 4. In large bowl, whisk sugar and egg together 5. Add melted butter 6. Add orange juice 7. In another bowl, whisk dry ingredients together 8. Mix wet ingredients and dry ingredients together 9. Add apricots and nuts to batter 10. Pour into a greased loaf pan and cook at 350 degrees for about an hour.....check with toothpick in center, and when it comes out clean, it is done |
