This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boswell Estate in Arlington, Texas in 1984. Ingredients:
8 ounce package macaroni |
20 ounce can pineapple chunks drained |
1/2 cup chopped red pepper |
1/2 cup shredded cheddar cheese |
2/3 cup mayonnaise |
1/2 cup apricot preserves |
Directions:
1. Cook macaroni according to package directions then drain and cool. 2. Combine macaroni, pineapple, pepper and cheese in medium bowl. 3. Mix mayonnaise and preserves then mix into salad. 4. Refrigerate one hour before serving. |
