Ingredients:
1 (6-ounce) package dried apricots |
2 cups water |
1/2 cup sugar |
Directions:
1. Combine apricots and water in a medium saucepan; cover and let soak overnight. 2. Bring apricot mixture to a boil. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat; drain thoroughly, discarding liquid. 3. Place apricots in container of an electric blender; process until smooth. Return pureed apricots to saucepan; stir in sugar. Bring to a boil; boil 2 minutes, stirring constantly. Remove from heat; let cool 15 minutes. 4. Line a 15- x 10- x 1-inch jellyroll pan with plastic wrap. Spread apricot mixture evenly in pan. Bake at 150°, with oven door opened slightly, 8 hours or overnight. Cool completely. 5. Cut apricot leather into 1- x 3- inch strips; roll up each strip. Store in airtight containers. |
