APRICOT JAM PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rankin Estate in Dallas, Texas in 1988. Ingredients:
4 eggs |
1 cup sugar |
1/2 cup butter |
1 cup apricot jam |
2 tablespoons flour |
1 tablespoon cornstarch |
1 teaspoon lemon extract |
1 pie shell unbaked |
Directions:
1. Mix all ingredients together until well combined. 2. Pour in unbaked pie shell and bake at 350 for 45 minutes. 3. Serve with whipped cream. |
