Recipe By Small batch preserving book Ingredients:
2 cups dried apricots (chopped) |
2 tablespoons lemon rind (grated) |
2 cups water |
1/2 cup lemon juice |
1/4 cup crystallized ginger (finely chopped) |
2/3 cup honey |
Directions:
1. Combine all ingredients except honey, in a med. stainless saucepan. 2. Bring to a boil over high heat, cover, reduce heat and boil gently for 35 min or until apricots are tender. 3. Place mixture in food processor and process until smooth. Return to saucepan, add honey, return to a boil then reduce heat and boil gently uncovered, or until very thick. stirring frequently. 4. Ladle into sterilized jars and process jars for 5 min after water comes to a boil. |
