This recipe is versitile in that you can use diffirent fruits and nuts and everytime it will be a new experience to your pallet Ingredients:
750ml nutty-wheat flour |
15ml baking powder |
5ml ground cinnamon |
2ml salt |
1ml ground nutmeg |
300ml low fat milk |
250ml honey |
1 egg, lightly beaten |
30ml oil |
250ml apricots, finely chopped |
250ml almonds, chopped |
125ml raisins |
Directions:
1. Combine flour; baking powder; cinnamon, salt and nutmeg in a large bowl and set aside. 2. Lightly beat the milk, honey, egg and oil in a separate bowl and add to dry ingredients, stirring until just moistened. 3. Gently stir in apricots, nuts and raisins. 4. Spoon into a greased 23cm loaf pan and bake at 180C for 55-60 minutes or until a skewer inserted comes out clean. 5. * I like to sprinkle some pumpkin seeds on top before I put the loaf pan in the oven! |
