Apricot-glazed Grilled Pineapple Sundaes With Rum ...

Warm, rummy, creamy, grilled pineapple!
Ingredients:
2 tbsps. apricot preserves
1 tsp. sugar
dash of ground cinnamon
4 1 thick fresh pineapple slices
1 cup vanilla frozen yogurt
rum sauce
2 tsp. butter
1/4 cup brown sugar
1/4 cup rum
Directions:
1. Combine 2 tsp. butter, 1/4 cup brown sugar and 1/4 cup Rum in a saucepan and heat until bubbling. Set aside to cool.
2. Microwave preserves on high for 10 seconds or until melted.
3. Combine sugar and cinnamon; stir well.
4. Place pineapple slices on a broiler pan and brush with preserves and sprinkle with cinnamon-sugar.
5. Broil 5 minutes or until bubbly and browning.
6. Plate two slices of pineapple; top with frozen yogurt and spoon some rum sauce over yogurt.
7. Serves 2.
